Eat this chocolate; it's good for you

Renee's Raw Chocolate opens on Main Street and promotes the benefits of raw food.

Renee's Raw Chocolate introduced its gourmet line of chocolate confections to a curious public at a ribbon-cutting ceremony Friday. Renee Faur, the owner of the business at 405 N. Main St., is a certified raw food chef. And, raw does not mean uncooked. Raw foods are cooked at temperatures less than 120 degrees to ensure that their enzymes are not destroyed. Enzymes assist in the digestion and absorption of food. Raw food proponents say that cooked food is devoid of enzymes, and cooking changes food's molecular structure and renders it toxic.
