A Little Surf & Turf on Super Bowl Sunday!

Super Bowl Sunday is second only to Thanksgiving as the one day of the year Americans focus most on food. When folks come to my house they expect grilled and/or smoked cuisine. But rather than spend countless hours smoking a shoulder or making ribs, this year I tried to keep it all very simple and bite sized.

I almost always have frozen BBQ on hand already proportioned in serving sizes for easy dethawing. In this case, I had some leftover smoked brisket from Christmas, so in addition to grilled prawns, I decided to make Chris Lilly's Brisket Wrapped Scallops.

Not including the time it took to marinade the prawns, this whole meal took less than a 1/2 hour to prepare, cook and serve.

Also, be sure to check out www.glenellynbackyardbbq.com and www.gebbq.blogspot.com for updates as we prepare for Glen Ellyn's 5th Annual Backyard BBQ Cook-Off held in beautiful Downtown Glen Ellyn on Sept. 14th.
