Super Bowl Sunday is second only to Thanksgiving as the one day of the year Americans focus most on food. When folks come to my house they expect grilled and/or smoked cuisine. But rather than spend countless hours smoking a shoulder or making ribs, this year I tried to keep it all very simple and bite sized.
I almost always have frozen BBQ on hand already proportioned in serving sizes for easy dethawing. In this case, I had some leftover smoked brisket from Christmas, so in addition to grilled prawns, I decided to make Chris Lilly's Brisket Wrapped Scallops.
Not including the time it took to marinade the prawns, this whole meal took less than a 1/2 hour to prepare, cook and serve.
