I'd like to share a recipe we made this week in a kid's cooking class at Marcel's in Glen Ellyn. There were 14 kids ages 8-12 making some really yummy (& healthy) snacks. Wow, did we have fun! Homemade Hummus is super easy to make and has a great smooth, clean taste. About half of the kids had tried hummus before, but this was the first time they made their own. Now you can make it, too!
Tahini-free Hummus (makes 4- ¼ cup snack servings)
1 (15 ounce) can chickpeas, drained

2 tablespoons fresh lemon juice
¼ cup olive oil

1 clove garlic, minced
Dash of smoked paprika
Put all ingredients into a food processor and blend until smooth. Chill in a covered container for 20 minutes. Serve with fresh vegetables like carrot sticks or sugar snap peas; with whole grain pita chips; or as Greek Style Hummus Dip.
