Rachel
Dau is a Baking and Pastry and Culinary Arts student at the College of DuPage. Upon
completion of her Bachelor’s in Hospitality and Tourism Management in Spring of
2015, she plans to begin working full time in either a bakery or hotel. Later
in life, her goal is to teach baking and pastry to either elementary or college
students. She is currently employed at the College of DuPage as the baking
assistant. She manages and creates production sheets and orders for the baking
and pastry department. In addition, she assists in product development for the
classes. Besides that, she makes cakes and pastries in a side business. Because
of her love of the art and complexity of chocolate, she is excited for the
challenge of participating in a chocolate showpiece competition.

In the Student Chocolate Challenge,
this year’s entrants will be asked to bring in and present pre-assembled chocolate
showpieces. Showpieces will be critiqued based on the overall artistic appeal
and creativity of the finished work, as well as the amount of technique and
skill displayed. The Student Chocolate Challenge offers students the
opportunity to experience the world of competitions, while allowing schools to
come together in a friendly, competitive environment.
