It's been a long time since I've posted here. Guess I've just been super busy. But now that Glen Ellyn's Fourth Annual Backyard BBQ is over and I have no competitions planned for the rest of this year, I've got some time and can get back to doing what I love - smoking, grilling, and experimenting using new recipes in a super-relaxed environment - my backyard.
Now, I've wanted to make pastrami for the longest time, so I finally decided to just do it. Rather than corn my own beef though, I thought I'd save time by using an already corned beef that I had procured from the Restaurant Depot. Having a KCBS membership allows me entry.
Smoking it at 260* using cherry wood and fresh spices including coarsely ground coriander and black pepper yielded absolutely fabulous results. Nothing much I'd change here. It was tender, full of flavor and all of my boys ate it up even asking for seconds.
