Cornish Game Hens are young, heavily fed chickens (weighing 1.5 to 2 lbs) that are processed within 5 weeks. Typcially, chickens are processed within an 8-9 week time-span. This weekend I happened to be in Costco looking for spare ribs and came across a pack of 4 CGHs. Inspired by a few recently viewed cooking shows, I thought I'd marinate these with achiote paste and then stuff them with a mix of chorizo and cornbread.

Thank you Michelle! I love pork and do cook a lot of it. Combine that with having four young boys who's rooms are a complete sty should answer your question.
I have been trying to mix it up a bit. My next post (which I'll submit today) is about a Smoked Pepper Stout Beef I had cooked last weekend. Maybe I'll do lamb ribs this weekend and possibly finish the year strong by making some pig candy for New Years. Be on the look-out for it.
